The palate shows a vibrant freshness, perfectly balancing the rounded nectarine and greengage fruit core

Sauvignon Blanc: Cloudy Bay 2017 $85  Immediately expressive in the glass, with notes of bright, ripe citrus, market lime, passionfruit and white peach. This vintage is likely to be remembered as one of the great Marlborough vintages, a sauvignon blanc that perfectly balances ripeness and freshness.

Chablis: Jean-Marc Brocard 2018 $85 From the northernmost wine growing region in Burgundy. Chablis produces dry white wines made from Chardonnay, and is situated on ancient Jurassic soils that give its wines minerality and flinty accents. Intense scent with minerals, honey, yellow apple, fennel and beeswax. Ripe yellow fruits in taste with fresh acid, citrus and peach on the finish.

RED

Shiraz: Farm Hand Organic $70 Classical varietal Shiraz that is flavoursome and fresh with red berried fruit, plums, subtle spice with a hint of savoury oak. The palate is nicely medium bodied and approachable with dark berry and hints of dark cocoa underpinned by soft, approachable tannins. Great with grilled steak.

Pinot Noir: Mt Difficulty Central Otago 2018 $100  This opens with vibrant floral notes, savoury brown spices and earthy notes on top of a core of red cherry that flows through the aroma. On the palate, supple and layered, bright red cherry notes introduce the wine. As the wine dwells on the palate layers unfurl, revealing silken texture. Fine tannins rise gracefully and are slowly displaced buy a tang od acidity and more vibrant red cherry notes on the long finish.

ROSÉ

Gibbston Valley Rosé 2020 $65 A delicate cherry blossom colour with charming red fruit aromatics lifting effusively from the glass. Concentrated, with a splash of delicate yet almost creamy berry fruit, the wine flows with youthful vibrancy towards its gently mineral, pleasingly dry finish.

Te Whai Bay Merlot Rosé 2021 $69 A summer blush with fresh peach and red rose petal colour Lifted aroma of wild strawberries and sherbet characters make this a sensual summer orchestra in the mouth with a refreshing and lingering glow that beckons another glass. Grown in Mangawhai.

Mirabeau Classic Rosé 2019 $70 A classical Cotes de Provence rosé, offering aromas of yellow peach, pear, freesias and strawberries. A gold medal wine plus best of show, France Rosés.

DESSERT

Ch Climens 1er Cru Barsac 375ml 2003 $350 Loads of honey, maple syrup, dried Apricot and spice. Full bodied medium sweet, with a refined spicy character. Pretty wine. Masses of botrytis. This is refined and long, a racy wine compared with power and muscle of many others. Beauty among the beasts.

ARE YOU CRAZY ?

Dom Perignon 1995 $2000 Dom is an outstanding Champagne that can make any occasion an unforgettable one. Consistently ranked as one of the top Champagnes in the world, it has a reputation for providing an unforgettable tasting experience. The 1995 is an extremely rare and hard to find vintage. Robert Parker 94/100

Louis Roederer Cristal Brut Rose 1996 $3000 This is an intensely-flavoured Champagne with an unusually light pale salmon colour it’s effervescence is restrained (almost non-existant) but the flavours are intense in this dry, austere, provocative offering. Robert Parker 98/100

Ch Mouton Rothschild Pauillac 2001 $4400 Purchased by the owner en primeur and stored in 14o wine fridge since. Great delineation and vigour, the wine has a lovely, deep, garnet red colour and a nose which, though not yet fully open, reveals attractive fruit (cherry, raspberry) with airing, enfolded in the roast coffee, tobacco and spice notes of refined oak Unctuous on the palate and amazingly supple, it mingles forward tannins, firm but mature, with consummately elegant flavours-caramel, vanilla, mocha, blackberry, wild berry fruit- that ooze charm. The finish, expansive and full of character, expresses the richness of this extremely attractive vintage.

Ch d’Yquem 750ml 2001 $4000 Rated 100 points by most commentators. What a wine with honey, caramel, cooked apple, bon bon, and pear tart. Dried apricots and peaches develop with time in the glass. What a palate., it is very sweet and rich at the impact but then its dense and opulent like a Grande Cru Burgundy, think Montrachet.Apple, lemon and pineapple with hints of mango on the palate. This is an incredible wine, areal dream, a legend.
